Biryani ,or claiming that it is made by following an authentic recipe
does not make it original. It can be a knock-off of the original. You
can always determine if the restaurant is serving the traditional
dish of Hyderabadi dum biryani or not by a few tips that could
help you determine the authentic one.
An authentic Biryani
made by the Basmati rice, a long, slender rice very popular in South
Asia. The rice has a typical flavor which causes the smell of the
dish to be deliciously mouth watering giving you a teaser of the dish
by its aroma. These characteristics make the Basmati a preferred
variety of staple to be used to make the dish.
Hyderabadi dum
biryani is often regarded as an authentic Biryani which has the
rice and the meat cooked together, along with the spices are
steam-cooked in a large conical vessel. The lid is then sealed with
dough to prevent the steam from escaping and the dish is cooked
slowly, on charcoal, that gives the dish, a distinct taste, and
flavor.

onion salad with some lime pieces. If any restaurant does not provide
you with all or one of these at any additional cost or free then they
are not serving the authentic product. These are the basic things
that make the Biryani meal wholesome any missing ingredient is like
serving Pizza without its topping.
Many restaurants are
known to serve a non-authentic delicacy called Pakki Biryani where
the meat and rice are cooked separately and then, mixed together at
the very end to make the dish, like mixing curry and rice together
that is not at all authentic, and is minus the flavor and taste. The
dish can be easily identified by its color. It looks yellowish or
light brown, unlike the authentic one, in which half of the rice
looks white and the other half looks yellowish or light brown.
The dish has to be
made by the low heat cooking method which is difficult to maintain by
novice chefs as they cannot really examine the dish while it is being
cooked. Once removed from the flame before or after the right time,
and the meat is either overcooked or undercooked the chef really
cannot make any adjustments. Hence, only the experts are apt in
making the perfect dish.
